I fell in love with these chocolate "brownie batter" bakes and had to share the love!
If you like brownies, chocolate, creamy peanut butter and treats then these are for you. Of course we're staying away from boxed mixes, sugar and junk. Add these to your meal prep list to keep your healthy habits alive throughout the week.
2 ripe bananas
3 tbsp unsweetened cocoa powder
1/2 cup creamy peanut or nut butter
2-3 tbsp dark chocolate morsels
*Muffin holders or tin
Preheat oven to 350
Using a hand mixer, mix the bananas, cocoa powder and nut butter until smooth
Sprinkle in the chocolate morsels and get everything off the sides of the bowl using a spatchula
From there, lay out 6-8 muffin holders, spray each with coconut oil or non stick spray and put on a baking sheet or in a muffin tin
Using your tablespoon, scoop out two tbsps of mix into each holder (2 tbsp = 1 bake)
Place in over for 15 minutes. Let cool.
Eat warm or refrigerate up to one hour for a mousse-like texture. These are dense, not cakey. They will not rise like a cupcake. Reminds me of a mix between a brownie and a peanut butter cup.
