Quinoa Tuna Salad

I love when clients share their yummy lunch and dinner recipes. This one, I had never heard of but wow! What a great carb + protein balance to get you through the day. 

Use the freshest ingredients you can find, be sure to follow the required measurements and take your time in making this. I find it that when I slow down and enjoy the process of making a delicious dish, I enjoy it more :)

Below is your grocery list - add or subtract foods so it fits your macros and palette. 

What you'll need:

1/2 cup tri-color quinoa, cooked

1/2 cup black beans, drained and rinsed

2/3 cup red and yellow peppers, diced

1/3 cup red onion, diced 

1/3 cup cilantro

1/4 avocado, diced

1 tbsp fresh jalapeño, finely diced

2 tbsp Bolthouse avocado & cilantro yogurt dressing 

Juice of 1/2 a lime

1/2 tsp cumin

Dash of cayenne 

Pinch of pink salt 

1 can tuna
