Finding the right pre workout or mid morning snack can be a challenge sometimes. I was messing around in my test kitchen and came up with my version of a peanut butter energy ball to have around the house. They turned out really great!
4 - 100 calorie packs of Quaker Oats, plain
3/4 cup Trader Joes crunchy peanut butter
1/4 cup unsweetened vanilla almond milk
2.5 tbsp honey
1 mini dark chocolate bar chopped up into chunks
Drizzle all natural maple syrup
Throw everything together in a large mixing bowl. Use a fork to mash the peanut butter up.
Put mix into fridge for 20 minutes to help with consistency.
Create small balls from the mix and place on a piece of foil or parchment paper. I grabbed a small handful of mix and rolled it around between the palms of my hand until it was concrete.
Be sure the balls are about the same size. This mix yielded 7 medium sized pieces for me.
Use the all natural maple syrup when you're done to drizzle over each piece.
Place in fridge for 2-10 hours for best taste.
From this mix, each ball is about 150 calories!
